Instructions
- In a large skillet, heat the olive oil over medium heat and sauté the onions until translucent, about 5 minutes.
- Add the Italian sausage and cook until browned, breaking it up with a spoon, approximately 6-8 minutes.
- Transfer the sausage mixture to the slow cooker and add the butternut squash, cannellini beans, shredded chicken breast, and quinoa.
- Pour in the chicken or vegetable broth and stir well to combine all ingredients.
