Ingredients

All-purpose flour

Graham cracker crumbs

Granulated sugar

Light brown sugar

Baking powder

Baking soda

Salt

Large eggs

Whole milk

Plain Greek yogurt

Unsalted butter

Vanilla extract

Semi-sweet chocolate chips

Mini marshmallows

Crushed graham crackers (for garnish)


Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the all-purpose flour, graham cracker crumbs, granulated sugar, light brown sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the large eggs, whole milk, Greek yogurt, melted butter, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  • Fold in the semi-sweet chocolate chips and mini marshmallows, reserving some marshmallows for topping.
  • Spoon the muffin batter into the prepared muffin tin, filling each liner about 2/3 full. Top with reserved mini marshmallows and a sprinkle of crushed graham crackers.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool for a few minutes before transferring to a wire rack to cool completely. Enjoy!

Notes

For a richer flavor, use dark chocolate chips instead of semi-sweet. These muffins are best served fresh but can be stored in an airtight container for up to 3 days.
