Instructions
- Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
- In a mixing bowl, sift together almond flour and powdered sugar to eliminate lumps.
- In another bowl, whip room temperature egg whites until they become foamy, then gradually add granulated sugar while continuing to whip until stiff peaks form.

- For the cranberry filling, combine cranberries, sugar, water, and lemon juice in a saucepan and simmer until cranberries burst and mixture thickens.
- Let the cranberry compote cool, then combine with melted white chocolate, heavy cream, and softened butter in a bowl.
- Fill the cooled macaron shells with the cranberry filling.
- Decorate with red royal icing or edible paint and sprinkle with fine red sanding sugar (if desired).
