Ingredients

spooned and leveled

2 teaspoons ground ginger

1 teaspoon cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1 teaspoon baking soda

1/4 teaspoon salt

3/4 cups unsalted butter

softened to room temperature

1 cup packed brown sugar

1 large egg

2 teaspoons vanilla extract

1/3 cup molasses

1/3 cup white sugar or coarse sugar


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  • In another bowl, cream the softened butter and brown sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and molasses until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Scoop tablespoon-sized amounts of cookie dough, roll them into balls, and then roll each ball in white or coarse sugar.
  • Place the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are set but the centers are still soft.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For crisper cookies, bake a minute or two longer. Ensure that the butter is softened for easier mixing.
