Ingredients

1 lb Andouille sausage

sliced

1 lb boneless chicken thighs

diced

1 cup fresh or frozen shrimp

peeled and deveined

1 cup bell peppers (mixed red and green)

chopped

1 medium yellow onion

4 cloves garlic

minced

1 can (14.5 oz) diced tomatoes in juice

1 cup long-grain rice

rinsed

2 cups low-sodium chicken broth

2 tsp Cajun spice blend


Instructions

  • In a large pot or Dutch oven, cook the Andouille sausage over medium heat until browned, about 5 minutes.
  • Add the diced chicken thighs and cook until browned and cooked through, about 8-10 minutes.
  • Stir in the chopped bell peppers, onions, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  • Add the diced tomatoes with juice, rice, chicken broth, and Cajun spice blend. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
  • After 20 minutes, add the shrimp to the pot. Cover and cook for an additional 5-7 minutes, or until the shrimp are cooked through and the rice is tender.
  • Remove from heat and let sit covered for 5 minutes before serving.

Notes

Feel free to adjust the spice level by adding more or less Cajun seasoning according to your family’s taste. This dish pairs well with a side of crusty bread or a fresh salad.
