2 cups self rising cornmeal mix
2 eggs or 1 extra large egg
2 tablespoons vegetable oil or refined coconut oil
bacon grease or lard
1/4 cup vegetable oil for skillet
1 3/4 cups buttermilk or regular milk
Instructions
- Preheat your oven to 425°F (220°C) and place a cast iron skillet in the oven to heat.
- In a mixing bowl, whisk together the self-rising cornmeal mix and eggs until well incorporated.
- Add the vegetable oil and buttermilk (or regular milk) to the cornmeal mixture, mixing until just combined. If using regular milk, start with 1 cup and add more if needed for desired consistency.
- Carefully remove the hot skillet from the oven and add 1/4 cup vegetable oil, swirling to coat the bottom.
- Pour the cornbread batter into the skillet and return it to the oven.
- Bake for 20-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the cornbread to cool slightly before slicing and serving.
Notes
For extra flavor, try adding corn kernels or chopped jalapeños to the batter before baking.
