Ingredients
400g / 1 ½ cups Chickpeas
canned
drained and rinsed
2 medium Avocados
pitted and mashed
½ medium Red Onion
finely diced
1 medium Bell Pepper
finely diced
1 small Jalapeño
seeded and minced
2 tbsp Lime Juice
freshly squeezed
1 tsp Chili Powder
½ tsp Cumin
½ tsp Smoked Paprika
¼ tsp Garlic Powder
Salt and Pepper to taste
4 large Tortillas
Fresh Cilantro
Hot Sauce
Shredded Lettuce
Instructions
- In a large bowl, combine the drained chickpeas, mashed avocados, red onion, bell pepper, and jalapeño.
- Add lime juice, chili powder, cumin, smoked paprika, garlic powder, and salt and pepper. Mix well to combine.
- Place a portion of the mixture onto each tortilla and roll tightly to create a wrap.
- Serve immediately, topped with fresh cilantro, hot sauce, and shredded lettuce if desired.
