¼ teaspoon salt

1 large egg

½ cup milk

2 tablespoons chopped fresh cilantro

1 tablespoon lime juice

½ cup mayonnaise (for aioli)

1 tablespoon lime juice (for aioli)

1 teaspoon chili powder (for aioli)

1 teaspoon hot sauce (optional

for extra heat)


Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the roasted corn, diced jalapeños, shredded cheese, all-purpose flour, cornmeal, baking powder, chili powder, smoked paprika, cumin, and salt.
  • In another bowl, whisk together the egg, milk, chopped cilantro, and lime juice.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Form the mixture into small bites or patties and place them on the prepared baking sheet.
  • Bake for 20-25 minutes, or until golden brown and crispy.
  • While baking, prepare the spicy aioli by mixing mayonnaise, lime juice, chili powder, and hot sauce (if using) in a small bowl.
  • Serve the corn bites warm with the spicy aioli, garnished with fresh cilantro leaves, lime wedges, and crumbled cotija cheese if desired.

Notes

Feel free to adjust the jalapeño amount based on your heat preference. You can also make these bites ahead of time and reheat them in the oven before serving.
