Ingredients

2 cups sushi rice uncooked

2.5 cups water

¼ cup rice vinegar

2 tablespoons sugar

1 teaspoon salt

1 lb fresh salmon fillet skinless and diced

½ cup mayonnaise

2 tablespoons Sriracha sauce or to taste

1 teaspoon sesame oil

½ cup green onions chopped

plus extra for garnish

1 sheet nori cut into small strips

to taste tobiko optional for garnish


Instructions

  • Rinse the sushi rice under cold water until the water runs clear, then drain.
  • In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.
  • In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool.
  • Preheat your oven to 350°F (175°C). In another bowl, combine the diced salmon, mayonnaise, Sriracha, sesame oil, and chopped green onions. Mix well.
  • In a baking dish, spread the sushi rice evenly over the bottom. Top with the salmon mixture, spreading it evenly.
  • Bake in the preheated oven for 20-25 minutes, until heated through and slightly golden on top.
  • Remove from the oven and let it cool for a few minutes. Garnish with additional green onions, nori strips, and tobiko if desired before serving.

Notes

Experiment with the level of Sriracha according to your spice preference. This dish is great for gatherings and can be served warm or at room temperature.
