2 cups sushi rice
2 ½ cups water
1 lb fresh salmon
skin removed
½ cup mayonnaise
2 tablespoons sriracha sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
1 avocado
sliced
2 green onions
chopped
1 tablespoon furikake seasoning
Seaweed sheets
for serving
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- While the rice is cooking, in a medium bowl, mix together the mayonnaise, sriracha, soy sauce, and sesame oil. Set aside.
- In a baking dish, spread the cooked sushi rice evenly on the bottom.
- Place the fresh salmon on top of the rice and drizzle the mayonnaise mixture over it.
- Bake in the preheated oven for about 20-25 minutes, or until the salmon is cooked through.
- Once baked, remove from the oven and let cool for a few minutes. Top with sliced avocado, chopped green onions, and furikake seasoning if using.
- Serve warm with seaweed sheets for wrapping.
Notes
Feel free to adjust the amount of sriracha based on your heat preference. This dish can also be served chilled, making it versatile for any occasion.
