Ingredients

Scale
  • For the Eyeballs:

    • 1 ½ cups creamy peanut butter

    • ½ cup butter, softened

    • 2 ½ cups confectioners’ sugar, sifted

    • 1 tablespoon vanilla extract

  • For the Coating:

    • 12 ounces white chocolate, chopped

    • 2 tablespoons shortening

    • 2 drops blue food coloring

  • For the “Pupil”:

    • ½ cup miniature semisweet chocolate chips

  • For the Bloodshot Effect:

    • 2 drops red food coloring

Instructions

  • Make the Peanut Butter Mixture:

    • In a bowl, blend 1 ½ cups creamy peanut butter with ½ cup softened butter until smooth.

    • Gradually add in 2 ½ cups sifted confectioners’ sugar and 1 tablespoon vanilla extract. Mix until well combined.

    • Roll the mixture into small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.

    • Freeze the peanut butter balls for about 30 minutes.

  • Prepare the White Chocolate Coating:

    • In a microwave-safe bowl, melt 12 ounces chopped white chocolate with 2 tablespoons shortening. Stir occasionally to prevent burning.

    • Once melted, stir in 2 drops of blue food coloring to create a spooky hue.

  • Coat the Peanut Butter Balls:

    • Dip each frozen peanut butter ball into the white chocolate mixture, ensuring they are fully covered.

    • Place them back on the parchment-lined baking sheet.

  • Add the Pupils and Bloodshot Effect:

    • While the chocolate is still soft, place a miniature semisweet chocolate chip on each ball to create the “pupil.”

    • Using a toothpick or a fine brush, add 2 drops of red food coloring around the “pupil” to create the bloodshot effect.

  • Let the Eyeballs Set:

    • Allow the coated eyeballs to cool completely in the fridge for 30-60 minutes before serving.
