1 ½ cups all-purpose flour
½ cup unsalted butter (chilled and cut into cubes)
¼ cup sugar (for the crust)
2 tablespoons sugar (for the filling)
½ teaspoon salt
2 large egg yolks
1 cup milk
2 cups fresh strawberries (hulled and sliced)
1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the flour, ¼ cup sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Stir in the egg yolks and a tablespoon of cold water, mixing until a dough forms. Roll out the dough and cut into small circles to fit your mini tart pans.
- Place the dough in the tart pans, prick the bottoms with a fork, and bake for 15-20 minutes until golden.
- In a saucepan, combine the milk, 2 tablespoons sugar, and vanilla extract over medium heat. Whisk in the sliced strawberries and cook until the mixture thickens. Pour into cooled tart shells and refrigerate until set.
Notes
For best flavor, use ripe and fresh strawberries. You can also replace strawberries with other fruits of your choice.
