Description
This Spring Pea & Mint Velouté with Crème Fraîche Marbling is a vibrant and refreshing soup, perfect for showcasing the sweetness of spring peas and the fragrance of fresh mint.
Ingredients

4 cups fresh or frozen peas
1 medium onion
chopped
2 cloves garlic
minced
4 cups vegetable or chicken stock
1 cup fresh mint leaves
½ cup crème fraîche
2 tablespoons olive oil
Salt and pepper to taste
Optional: Microgreens for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the peas and vegetable or chicken stock, bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the fresh mint leaves and cook for an additional 5 minutes.
- Remove from heat and blend the soup until smooth using an immersion blender or by transferring in batches to a stand blender.
- Season with salt and pepper to taste, and swirl in the crème fraîche before serving.
- Garnish with microgreens if desired and serve warm.
Notes
For a lighter version, you can replace crème fraîche with Greek yogurt.
