Ingredients

Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- Boil the mini potatoes until fork-tender, then cool and slice in half.
- On a clean surface, roll out the puff pastry sheets and cut into squares large enough to wrap around the potato halves.
- Place a slice of corned beef, a piece of Swiss cheese, and a dollop of shredded cheddar cheese on each potato half.
- Top with a pickle slice and wrap the puff pastry around the filled potato, sealing the edges.
- Place the wrapped potatoes on the prepared baking sheet and brush with an egg wash for a golden finish.
