This Steak Cheddar Potato Slow Cooker recipe combines tender beef and creamy cheddar sauce with perfectly cooked potatoes for a warm and hearty dish.
Ingredients
1.5 pounds sirloin steak or ribeye cut into 1-inch cubes
1 pound baby red or Yukon gold potatoes halved or quartered
1 medium onion diced
3 cloves garlic minced
1 cup beef broth or stock
1 teaspoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and black pepper to taste
2 tablespoons olive oil or butter
2 cups shredded cheddar cheese
1 cup heavy cream
2 tablespoons cream cheese softened
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Pinch of cayenne pepper optional
Fresh parsley chopped
Chives sliced
Instructions
- In a skillet, heat olive oil or butter over medium-high heat. Add the cubed steak, season with salt and pepper, and brown on all sides.
- Transfer the browned steak to the slow cooker. Add potatoes, onion, garlic, beef broth, Worcestershire sauce, smoked paprika, dried thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender and the steak is cooked through.
- In a saucepan over medium heat, combine shredded cheddar cheese, heavy cream, cream cheese, garlic powder, onion powder, and cayenne pepper. Stir until melted and smooth.
- Once the steak and potatoes are done, pour the cheese sauce over the mixture in the slow cooker. Stir gently to combine.
- Serve hot, garnished with chopped parsley and sliced chives if desired.
