Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg, vanilla extract, strawberry extract, and food coloring (if using), and mix until well combined.
  • In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth to make the filling.
  • Scoop a tablespoon of cookie dough and flatten it slightly in your hand. Add a small ball of the cream cheese filling in the center and encase it with dough, rolling it into a ball.
  • Roll each dough ball in granulated sugar and place them on the prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden.
