Ingredients
2 cups (250 g) all-purpose flour
1/2 cup (100 g) granulated sugar
1/4 tsp fine salt
3/4 cup (170 g) unsalted butter

16 oz (450 g) cream cheese
softened
3/4 cup (150 g) granulated sugar
2 large eggs
room temperature
1 tsp pure vanilla extract
2 cups (300 g) fresh strawberries
chopped
2 tbsp (25 g) granulated sugar
1 tbsp lemon juice
1 tsp cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a bowl, whisk together the flour, 1/2 cup sugar, and salt.
- Mix in the melted butter until combined.
- Press the mixture into the prepared baking pan to form the crust.
- In another bowl, beat the softened cream cheese with 3/4 cup sugar until smooth.
- Add the eggs, vanilla extract, and mix until fully combined.
- In a small bowl, toss the chopped strawberries with 2 tbsp sugar, lemon juice, and cornstarch.
- Spread the cream cheese mixture evenly over the crust, then top with the strawberry mixture.
- Bake for 30 minutes or until the filling is set and the top is lightly golden.
- Let cool completely before cutting into bars and serving.
