Ingredients
8 ounces (226g) cream cheese softened
1/2 cup (100g) granulated sugar
1 teaspoon vanilla extract
1/4 cup (60ml) heavy cream
1 cup (150g) fresh strawberries finely chopped
1 1/2 cups (180g) graham cracker crumbs
1/4 cup (50g) unsalted butter melted
1/4 cup (35g) chopped toasted pecans (optional)
Additional chopped strawberries for garnish (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
- Add the heavy cream and continue to mix until the mixture is creamy and well-combined.
- Gently fold in the finely chopped fresh strawberries.
- In another bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
- Spoon the graham cracker mixture into taco-shaped molds or onto a parchment-lined baking sheet to form taco shells. Bake at 350°F (175°C) for 10-12 minutes until golden brown and crisp.
- Once cool, fill each taco shell with the cheesecake mixture.
- Garnish with additional chopped strawberries and toasted pecans if desired. Serve immediately.
Notes
