Instructions
- Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan by greasing it lightly.
- In a food processor, crush the Golden Oreos into fine crumbs and mix them with melted butter to form the crust. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the strawberry gelatin and mix until fully combined.
- In another bowl, whip the heavy whipping cream until stiff peaks form, then gently fold it into the cream cheese mixture until well incorporated.
- Pour the cheesecake filling over the crust in the springform pan and smooth the top. Bake for 30 minutes or until set but still slightly jiggly in the center.
- Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours to set completely.
- Once chilled, top the cheesecake with crushed freeze-dried strawberries for a crunchy, fruity finish before serving.
