Description

Ingredients

½ cup balsamic vinegar

12 slices Italian bread

1 tablespoon olive oil

1 pound strawberries

washed and diced

2 teaspoons fresh thyme leaves

plus more for serving

1 cup goat cheese

room temperature

salt and freshly ground pepper to taste


Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small saucepan, combine balsamic vinegar and simmer over medium heat until reduced by half, about 10 minutes.
  • Brush each slice of Italian bread with olive oil and place on a baking sheet.
  • Bake for 8-10 minutes or until golden and crisp.
  • In a bowl, combine diced strawberries, fresh thyme, salt, and pepper.
  • Spread a layer of goat cheese on each slice of toasted bread.
  • Top with the strawberry mixture and drizzle with the reduced balsamic vinegar.
  • Garnish with additional thyme leaves before serving.
