½ cup balsamic vinegar
12 slices Italian bread
1 tablespoon olive oil
1 pound strawberries
washed and diced
2 teaspoons fresh thyme leaves
plus more for serving
1 cup goat cheese
room temperature
salt and freshly ground pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small saucepan, combine balsamic vinegar and simmer over medium heat until reduced by half, about 10 minutes.
- Brush each slice of Italian bread with olive oil and place on a baking sheet.
- Bake for 8-10 minutes or until golden and crisp.
- In a bowl, combine diced strawberries, fresh thyme, salt, and pepper.
- Spread a layer of goat cheese on each slice of toasted bread.
- Top with the strawberry mixture and drizzle with the reduced balsamic vinegar.
- Garnish with additional thyme leaves before serving.
Notes
Feel free to add a drizzle of honey for extra sweetness or replace strawberries with other seasonal fruits.
