Ingredients
2 cups milk
2 tbsp strawberry custard powder
2–3 tbsp sugar
1 cup coconut water
1 tsp agar-agar powder
1 tbsp sugar
½ cup strawberries
1 large mango
1 cup coconut jelly
1 cup strawberry custard
¼ cup gond katira
½ cup cooked sago pearls
½ cup milk
¼ cup condensed milk
1 cup ice cubes
Instructions
- In a saucepan, heat the milk and sugar until warm. Whisk in the strawberry custard powder until thickened; set aside to cool.
- For the coconut jelly, combine coconut water and agar-agar in a pot. Bring to a boil, add sugar, then pour into a mold. Refrigerate until set.
- Soak gond katira in water until translucent. Cook sago pearls according to package instructions and drain.
- Once the coconut jelly is set, cube it and combine with chopped strawberries, mango cubes, chilled strawberry custard, gond katira, and cooked sago in a large bowl.
- Drizzle in milk and condensed milk, adjusting to taste, and mix well to combine all ingredients.
- Serve in bowls over ice cubes, and enjoy your fruity tropical delight!
Notes
For a vegan version, substitute dairy milk with coconut milk and condensed milk with coconut cream plus maple syrup. Adjust sugars to taste based on preference.
