Flat Rice Noodles

Vegetable Oil

Fresh Garlic

Low-Sodium Soy Sauce

Brown Sugar

Bell Peppers

Broccoli Florets

Carrots

Chicken or Shrimp

Instructions

  • Soak flat rice noodles in hot water for about 20 minutes, or until softened, then drain and set aside.
  • In a large frying pan or wok, heat vegetable oil over high heat.
  • Add minced garlic and stir-fry for about 30 seconds until fragrant, being careful not to burn it.
  • Add sliced bell peppers, broccoli florets, and julienned carrots to the pan, stir-frying for 2-3 minutes until they are slightly tender but still crisp.
  • Add chicken or shrimp to the pan and cook until fully cooked through.
  • Stir in the soaked noodles, low-sodium soy sauce, and brown sugar. Toss everything together for a few minutes until the noodles are heated through and coated in the sauce.
  • Serve hot, garnished with fresh herbs if desired.

Notes

Feel free to customize your vegetables based on what you have available, and adjust the soy sauce and sugar to taste.
