Sugar-Free Cheesecake Bars are a delicious and guilt-free treat, perfect for satisfying your sweet tooth without the added sugar.
Ingredients
16 oz cream cheese (softened to room temperature)
¾ cup sugar-free powdered sugar (monk fruit
erythritol
or allulose)
1 cup sour cream
1 tsp vanilla extract
2 tbsp lime juice
1½ cups almond flour
¼ cup melted butter
2 tbsp sugar-free sweetener
½ tsp vanilla extract
¼ tsp salt
1½ cups fresh or frozen mixed berries (strawberries
blueberries
raspberries)
1 tbsp sugar-free sweetener
1 tsp lemon juice
Instructions
- Preheat the oven to 325°F (160°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine the cream cheese and sugar-free powdered sugar, and beat until smooth.
- Add sour cream, vanilla extract, and lime juice; mix until fully incorporated.
- In another bowl, mix almond flour, melted butter, sugar-free sweetener, vanilla extract, and salt until crumbly.
- Press the almond crust mixture into the bottom of the prepared baking dish to form an even layer.
- Pour the cheesecake filling over the crust and spread it evenly.
- Bake for 25-30 minutes or until the edges start to set but the center is still slightly jiggly.
- Let the bars cool completely, then refrigerate for at least 2 hours before slicing.
- For optional berry topping, toss mixed berries with sugar-free sweetener and lemon juice. Serve on top of cheesecake bars.
Notes
Make sure to soften the cream cheese for easier mixing. Adjust sweetness to your preference using different sugar-free sweeteners.
