Crust

  • 1 cup fine almond flour, sifted

  • 16 ounces cream cheese, room temperature

  • ⅔ cup sour cream

  • ¾ cup granulated sugar substitute (½ cup Swerve + ¼ cup Monkfruit)

  • 2 tablespoons dark cocoa powder

  • 2 large eggs

  • 2 egg yolks

  • ½ cup heavy cream

  • 1 teaspoon vanilla extract


Instructions

  • Preheat the oven to 350°F (175°C).

  • In a bowl, mix almond flour, melted butter, sugar substitute, and cocoa powder until combined.

  • Press the mixture firmly into the bottom of a greased mini muffin tin to form the crust.

  • Melt the sugar-free dark chocolate and allow it to cool slightly.

  • In a large bowl, beat the cream cheese, sour cream, and sugar substitute until smooth and creamy.

  • Add the eggs and egg yolks, mixing well after each addition.

  • Stir in heavy cream, vanilla extract, melted chocolate, and cocoa powder until fully combined.

  • Pour the cheesecake mixture over the crusts in the muffin tin.

  • Bake for 18–20 minutes, until the centers are set.

  • Remove from the oven and allow them to cool completely.
