2 cups granular no-calorie sucralose sweetener (e.g.
Splenda ®)
2 large eggs
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the peanut butter, sucralose sweetener, and eggs until well combined.
- Scoop tablespoon-sized amounts of dough and place them on a baking sheet lined with parchment paper.
- Flatten each cookie slightly with a fork, creating a crisscross pattern on top.
- Bake in the preheated oven for about 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
These cookies can be stored in an airtight container for up to a week. You can also add sugar-free chocolate chips if desired.
