Cooked rice optional for serving

4 ears sweet corn or 4 cups frozen corn

2 tablespoons olive oil

2 tablespoons lime juice

2 large ripe avocados diced

3/4 cup finely diced red onion

1 small red bell pepper diced

1/3 cup finely chopped cilantro

1 tablespoon minced garlic

1 teaspoon ground cumin

1/4 teaspoon crushed red pepper flakes optional

Instructions

  • Prepare the Taco Chicken according to the linked recipe.
  • While the chicken is cooking, prepare the corn avocado salsa by boiling the corn until tender (if using fresh) and allowing it to cool.
