- 2 bunches of kale
- 3–4 fresh peaches
- 1 cup blueberries
- ¼ cup pepitas
- 1 lemon

- 4 lemons
- 2 Tbsp + 2 tsp honey
- ¼ cup olive oil
- cracked black pepper
Instructions
- In a large bowl, massage the chopped kale with olive oil and the juice of 1 lemon until the leaves wilt slightly.
- Add the diced peaches, blueberries, and pepitas to the kale, gently tossing to combine.
- In a separate bowl, whisk together the juice of 4 lemons, honey, ¼ cup olive oil, and cracked black pepper to taste to make the vinaigrette.
- Drizzle the lemon vinaigrette over the salad, tossing lightly to coat everything evenly. Serve immediately.
