2 cups fresh strawberries quartered
2 1-inch pieces orange peel
1/4 cup granulated sugar
1/4 cup water
2 sprigs fresh mint
1/3 cup Grand Marnier liqueur
1 cup freshly squeezed orange juice
1 bottle prosecco or champagne
orange slices for garnish
Instructions
- In a medium saucepan over medium heat, combine the strawberries, orange peel, sugar, and water. Bring to a rolling simmer, then reduce to medium-low heat and simmer, mashing strawberries with a wooden spoon, until sugar dissolves and mixture thickens, about 20 minutes.
- Remove from heat, stir in sprigs of mint, and cool for 30 minutes. Discard mint and orange peel, strain through a fine-mesh strainer, and pour into an airtight container. Store in the fridge until chilled, or up to 1 week.
- To make the mimosas, stir Grand Marnier into the chilled strawberry simple syrup. Fill a champagne flute with 2 tablespoons of the syrup mixture, 3 tablespoons of orange juice, and top with prosecco or champagne.
- Garnish each glass with a small strawberry, slice of orange, and a sprig of mint. Repeat for all glasses to serve.
Notes
This recipe makes about 6 mimosas. Feel free to substitute strawberries with cranberries for a festive twist. You can make the strawberry syrup up to 2 weeks in advance.
