Ingredients
2 cups (250 g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
Optional: ½ tsp ground cinnamon
½ cup (115 g) unsalted butter
softened
1 cup (200 g) granulated sugar
½ cup (100 g) packed brown sugar
3 large eggs
room temperature
1 tsp pure vanilla extract
1 cup (240 ml) buttermilk
1 ½ cups (150 g) chopped pecans
toasted
2 tbsp brown sugar
1 tbsp melted butter
Additional pecans for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, and optional cinnamon.
- In another large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Mix in the buttermilk until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped toasted pecans.
- Pour the batter into the prepared loaf pan and smooth the top.
- For the topping, mix the brown sugar and melted butter together and sprinkle on top of the batter, along with additional pecans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
