½ cup (115 g) unsalted butter

1 cup (200 g) granulated sugar

½ cup (100 g) packed brown sugar

3 large eggs

room temperature

1 tsp pure vanilla extract

1 cup (240 ml) buttermilk

1 ½ cups (150 g) chopped pecans

toasted

2 tbsp brown sugar

1 tbsp melted butter

Additional pecans for garnish


Instructions

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, salt, and optional cinnamon.
  • In another large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Mix in the buttermilk until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chopped toasted pecans.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • For the topping, mix the brown sugar and melted butter together and sprinkle on top of the batter, along with additional pecans.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
