Ingredients
4 slices thick-cut bacon about 3 ounces
2 tablespoons extra-virgin olive oil
2 sweet potatoes scrubbed clean
peels on
1 ¼ teaspoons kosher salt divided
¾ teaspoon ground black pepper
2 medium avocados peeled
pitted
and diced
1 tablespoon fresh lime juice
½ teaspoon smoked paprika
3 tablespoons chopped cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- Place the bacon on a baking sheet and bake until crispy, about 15-20 minutes. Remove from oven and let cool.
- While the bacon is cooking, cut the sweet potatoes into bite-sized cubes and toss with olive oil, 1 teaspoon of kosher salt, and black pepper.
- Spread the sweet potatoes on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized.
- In a bowl, mix the diced avocados with lime juice, remaining salt, smoked paprika, and chopped cilantro.
- Once the sweet potatoes are done, let them cool slightly before assembling.
- Crumble the baked bacon and combine it with the avocado mixture.
- Top each sweet potato cube with a spoonful of the avocado-bacon mixture and serve immediately.
