1 medium-large sweet potato
baked
1 apple
small gala or jazz
¼ teaspoon cinnamon ground
2 tablespoon butter
¼ teaspoon salt
¼ cup pecans
1 teaspoon brown sugar
Instructions
- Bake the sweet potato until tender, about 30 minutes at 400°F.
- While the sweet potato bakes, chop the apple into small pieces.
- In a skillet, melt the butter over medium heat.
- Add the chopped apple, cinnamon, and salt, cooking for about 5 minutes until softened.
- Stir in the pecans and brown sugar, cooking for an additional 2 minutes.
- Once the sweet potato is baked, cut it in half and fluff the inside with a fork.
- Top each half with the apple mixture and serve warm.
