These Tahini-Caesar Roasted Brussels Sprouts are a delicious twist on the classic Caesar salad, combining nutty tahini with roasted Brussels for a unique and flavorful side dish.

1 pound Brussels sprouts
halved
2 tablespoons olive oil
1/4 cup tahini
2 tablespoons lemon juice
1 clove garlic
minced
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts in a single layer on a baking sheet and roast for 20-25 minutes, or until they are golden and tender.
- Meanwhile, in a small bowl, whisk together tahini, lemon juice, minced garlic, and a pinch of salt to create the dressing.
- Once the Brussels sprouts are done, remove them from the oven and drizzle with the tahini dressing, tossing to coat evenly.
- If desired, sprinkle grated Parmesan cheese on top and return to the oven for an additional 5 minutes to melt the cheese.
- Garnish with fresh parsley and serve warm.
Notes
For added flavor, consider adding crushed red pepper flakes or serving with a wedge of lemon to squeeze over the sprouts.
