Description
These Tasty Mini Potato Skins are the perfect appetizer, featuring crispy potato shells filled with buttery cheese and topped with crispy bacon and fresh chives.
Ingredients

1.75 lb potatoes
3.5 tbsp olive oil
1 tsp salt
0.5 tsp pepper
2.5 tbsp butter
1.75 cup cheese
0.5 tsp garlic powder
10 slices bacon
1 cup sour cream
0.25 bunch chives
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes, then dry them thoroughly.
- Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch thick shells.
- In a bowl, mix the potato shells with olive oil, salt, and pepper until well coated.
- Place the potato halves cut side down on a baking sheet and bake for 25 minutes or until golden and crispy.
- While the shells are baking, melt the butter in a saucepan and stir in the shredded cheese and garlic powder until melted and well combined.
- Once the shells are done, remove them from the oven and fill each shell with the cheesy mixture.
- Top each filled shell with crumbled crispy bacon.
- Return to the oven for another 5 minutes, until everything is heated through.
- Serve warm topped with a dollop of sour cream and chopped chives.
Notes
For maximum crispiness, ensure the potato skins are well-coated with oil and bake until just golden.
