300 grams active sourdough starter active and bubbly

650 grams warm water

1000 grams bread flour

50 grams honey

40 grams olive oil or avocado oil

20 grams fine sea salt

12 teaspoons ground cinnamon

1/2 cup brown sugar

1 tbsp flour


Instructions

  • In a large mixing bowl, combine the active sourdough starter and warm water, stirring until well mixed.
  • Add the bread flour, honey, olive oil, and fine sea salt to the mixture. Mix until a dough forms.
  • Knead the dough for about 10 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover, and let it rise in a warm area for 4-6 hours or until doubled in size.
  • Prepare the cinnamon filling by mixing ground cinnamon, brown sugar, and flour in a bowl.
  • Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle.
  • Spread the cinnamon filling evenly over the dough and roll it tightly into a log.
  • Cut the log into equal sections and place them in a greased baking dish.
  • Cover and let them rise for another 1-2 hours until puffy.
  • Preheat your oven to 375°F (190°C). Bake the bread for 25-30 minutes or until golden brown.
