  • 4 pounds (about 2 kg) russet or Yukon Gold potatoes, peeled and cut into quarters, sixths, or eighths, depending on size

  • 1/2 teaspoon (4 g) baking soda

  • 5 tablespoons (75 ml) extra-virgin olive oil, duck fat, goose fat, or beef fat

  • Small handful picked fresh rosemary leaves, finely chopped

  • 3 medium cloves garlic, minced

  • Freshly ground black pepper to taste

  • Small handful fresh parsley leaves, minced

  • Kosher salt to taste


Instructions

  • Preheat your oven to 425°F (220°C).

  • Place the quartered potatoes in a large pot and cover with water. Add kosher salt and 1/2 teaspoon baking soda. Bring to a rolling boil.

  • Parboil the potatoes for 10 minutes to soften the interior.

  • Drain the potatoes and let them steam dry for a few minutes.

  • In a large bowl, combine olive oil (or preferred fat), chopped rosemary, minced garlic, black pepper, and a pinch of salt. Toss the potatoes in this mixture until evenly coated.

  • Spread the potatoes in a single layer on a baking sheet. Roast for 30-40 minutes, flipping halfway through, until golden and crispy.

  • Garnish with minced parsley and serve hot.
