Ingredients
4 pounds (about 2 kg) russet or Yukon Gold potatoes, peeled and cut into quarters, sixths, or eighths, depending on size
1/2 teaspoon (4 g) baking soda
5 tablespoons (75 ml) extra-virgin olive oil, duck fat, goose fat, or beef fat
Small handful picked fresh rosemary leaves, finely chopped
3 medium cloves garlic, minced
Freshly ground black pepper to taste
Small handful fresh parsley leaves, minced
Kosher salt to taste
Instructions
Preheat your oven to 425°F (220°C).
Place the quartered potatoes in a large pot and cover with water. Add kosher salt and 1/2 teaspoon baking soda. Bring to a rolling boil.
Parboil the potatoes for 10 minutes to soften the interior.
Drain the potatoes and let them steam dry for a few minutes.
In a large bowl, combine olive oil (or preferred fat), chopped rosemary, minced garlic, black pepper, and a pinch of salt. Toss the potatoes in this mixture until evenly coated.
Spread the potatoes in a single layer on a baking sheet. Roast for 30-40 minutes, flipping halfway through, until golden and crispy.
Garnish with minced parsley and serve hot.
Notes
For extra crispiness, give the parboiled potatoes a good shake in the pot before coating them with the oil mixture.
