Description
These are the best fudgy chewy browkies (brookies) you’ll ever make. A delightful blend of brownies and cookies, they are rich, indulgent, and perfect for any dessert lover.
Ingredients
95 g (¾ cups) plain (all-purpose) flour
2 tablespoons cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
225 g (1 ¼ cups) dark chocolate
chopped
56 g (¼ cups) butter
salted or unsalted
2 eggs *room temperature
100 g (¾ cups) caster or granulated sugar
90 g (½ cups) Demerara or raw sugar

1 teaspoon vanilla
85 g (½ cups) dark or milk chocolate chips
Instructions
- Preheat your oven to 180°C (350°F) and grease a baking dish.
- In a bowl, mix together the flour, cocoa powder, baking powder, and salt.
- In a saucepan over low heat, melt the dark chocolate and butter together, stirring until smooth.
- Remove from heat and let cool slightly before whisking in the eggs, sugars, and vanilla.
- Gently fold in the dry ingredients until just combined.
- Stir in the chocolate chips.
- Pour the batter into the prepared dish and spread evenly.
- Bake for 30 minutes or until a skewer comes out with a few moist crumbs.
- Allow to cool in the dish before cutting into squares and serving.
Notes
For a slightly crunchy topping, you can sprinkle some demerara sugar on top before baking. These browkies are best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
