Ingredients
1 3/4 cups all-purpose flour

1 cup peaches
finely diced (fresh or canned)
1/2 cup milk

3 cups powdered sugar

1 teaspoon vanilla extract
2 tablespoons peach puree (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together the softened butter, honey, and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined. Fold in the diced peaches.
- Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
- For the frosting, beat together the softened butter, powdered sugar, honey, and additional vanilla extract until creamy. If desired, add the peach puree for extra flavor and mix until combined.
- Frost the cooled cupcakes with the peach cream cheese frosting. Optionally, garnish with additional diced peaches or a drizzle of honey.
Notes
Ensure your eggs are at room temperature for better mixing. You can use either fresh or canned peaches, but drain the canned ones well.
