Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream together the softened butter, honey, and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined. Fold in the diced peaches.
  • Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
  • For the frosting, beat together the softened butter, powdered sugar, honey, and additional vanilla extract until creamy. If desired, add the peach puree for extra flavor and mix until combined.
