Ingredients
To Season the Fish

1 large fish fillet (cod, tilapia, sea bass, or snapper)

1 teaspoon paprika

1 teaspoon Italian seasoning

1 teaspoon Cajun seasoning (Old Bay or Creole)

1/2 teaspoon chili flakes

1 teaspoon fish seasoning (optional)

1/2 teaspoon salt

1/2 teaspoon black pepper

3 tablespoons cooking oil
For the Tomatoes & Olives

2 cups cherry tomatoes
-
1/4 cup olives, sliced or whole

3 garlic cloves, minced
-
2 sprigs fresh parsley, chopped

2 sprigs fresh thyme
-
1/2 teaspoon of the mixed seasoning above

2 tablespoons water
-
3 tablespoons salted butter

Pinch of salt and black pepper
Instructions

Preheat oven to 400°F (200°C). Lightly grease a baking dish.

Pat fish dry and season both sides with paprika, Italian seasoning, Cajun seasoning, chili flakes, fish seasoning (if using), salt, and pepper.

Drizzle fish with cooking oil and place in the baking dish.

In a bowl, combine cherry tomatoes, olives, garlic, parsley, thyme, and 1/2 teaspoon of the seasoning mix.

Add water and dot the mixture with butter. Season lightly with salt and pepper.

Spoon tomato-olive mixture around and over the fish.

Bake for 25–30 minutes, or until fish flakes easily with a fork.
