Ingredients
3 Tbsp. extra-virgin olive oil

4 (8-oz.) boneless
skinless chicken breasts
Kosher salt
Freshly ground black pepper
2 garlic cloves
finely chopped
1 Tbsp. fresh thyme leaves
1 tsp. crushed red pepper flakes
3/4 cup low-sodium chicken broth
1/2 cup finely chopped sun-dried tomatoes
1/2 cup heavy cream
1/4 cup finely grated Parmesan
Torn fresh basil
for serving
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Sear each side until golden brown, about 6-7 minutes per side. Remove chicken and set aside.
- In the same skillet, add remaining olive oil, garlic, thyme, and crushed red pepper flakes. Sauté until fragrant, about 1 minute.
- Pour in the chicken broth and add the sun-dried tomatoes. Bring to a simmer.
- Stir in heavy cream and Parmesan, mixing until well combined.
- Return chicken to the skillet, spooning sauce over them. Simmer until chicken is cooked through, about 5-10 minutes.
- Serve with torn fresh basil on top.

For extra flavor, consider marinating the chicken in olive oil, garlic, and thyme for a few hours before cooking.
