These Chicken Taco Stuffed Mini Peppers are a fun and flavorful twist on traditional tacos, delivering big flavors in a tiny package.

15–20 sweet mini peppers
2 cups shredded rotisserie chicken
1 tablespoon taco seasoning
1 cup black beans (use one 15 oz can or cooked)
1 small onion finely chopped
2 cloves minced garlic
2 tablespoons olive oil
1 cup shredded cheese
¼ cup cilantro chopped
Sour cream and salsa for serving
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the mini peppers and remove seeds. Place them in a baking dish.
- In a bowl, mix shredded chicken, taco seasoning, black beans, chopped onion, minced garlic, and olive oil until well combined.
- Stuff each mini pepper with the chicken mixture and place them upright in the baking dish.
- Top each pepper with shredded cheese.
- Bake for 25-30 minutes, or until cheese is melted and peppers are tender.
- Garnish with chopped cilantro and serve with sour cream and salsa.
Notes
Feel free to customize the stuffing with your favorite taco ingredients. These mini peppers can also be grilled for an added charred flavor.
