			3 cups walnut halves
1 cup granulated sugar
½ cup water
2 tablespoons unsalted butter
½ teaspoon pure vanilla extract
¼ teaspoon fine sea salt
½ teaspoon ground cinnamon
¼ teaspoon cayenne pepper
1 tablespoon honey
Instructions
- In a large saucepan, combine the water and sugar over medium heat, stirring until the sugar has dissolved.
- Add the walnut halves to the saucepan and bring the mixture to a boil.
- Continue boiling for 5 minutes without stirring.
- Reduce the heat to medium-low and add the butter, vanilla extract, sea salt, and any optional flavor add-ins.
- Cook for an additional 10-15 minutes, stirring occasionally, until the walnuts are nicely coated and the mixture is thick.
- Remove from heat and spread the candied walnuts onto a baking sheet lined with parchment paper.
- Let cool completely before breaking apart and serving.
