20 oz. refrigerated Tortellini
6 slices bacon
uncooked
2 teaspoons garlic
minced
2 Tablespoons all-purpose flour
1 pint half and half
½ teaspoon dried Italian seasoning
¼ cup Parmesan
shredded
¼ Asiago cheese
shredded
½ cup mozzarella cheese
shredded
¾ cup spinach
finely shredded (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the bacon until crispy. Remove and crumble, leaving the bacon fat in the pan.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Stir in the flour and cook for an additional minute.
- Slowly whisk in the half and half, stirring constantly until the mixture thickens.
- Season with salt, pepper, and dried Italian seasoning.
- In a large mixing bowl, combine the cooked tortellini, cheese mixture, crumbled bacon, and spinach (if using).
- Transfer the mixture to a greased baking dish and top with mozzarella and remaining cheeses.
- Bake for 20-25 minutes or until bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
Feel free to substitute the cheeses based on your preference. Adding vegetables like broccoli or mushrooms can enhance the dish.
