Ingredients
1 lb sushi-grade tuna cut into 1/2-inch cubes
3 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon sriracha
1 teaspoon honey optional
1 green onion sliced
1 teaspoon sesame seeds
2 cups cooked sushi rice or jasmine rice
1 avocado sliced
1 cucumber sliced thinly
1/2 cup edamame shelled
1/2 cup radishes thinly sliced
Seaweed salad optional
Pickled ginger optional
Additional toppings such as sliced jalapeños extra green onions or cilantro optional
Instructions
- In a medium bowl, combine the soy sauce, sesame oil, sriracha, honey (if using), and sliced green onion to create the marinade.
- Add the tuna cubes to the marinade and gently toss to coat. Let it marinate for at least 15 minutes in the refrigerator.
- While the tuna is marinating, prepare the sushi rice according to package instructions and set aside to cool.
- Slice the avocado, cucumber, and radishes thinly and set them aside for assembly.
- Once the tuna has marinated, assemble the poke bowl by placing a serving of rice at the bottom of a bowl.
- Top the rice with marinated tuna, avocado slices, cucumber, edamame, and radishes.
- Sprinkle sesame seeds on top and add any additional toppings such as seaweed salad, pickled ginger, sliced jalapeños, extra green onions, or cilantro as desired.
