Ingredients

1/2 cup (111g) salted butter

1/2 cup (115g) granulated sugar

1 tsp vanilla extract

1 egg white

1 1/2 cups (228g) all-purpose flour

1 tsp baking powder

20 caramels

unwrapped

1 tbsp milk

2 cups (400g) milk chocolate chips


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the salted butter and granulated sugar until light and fluffy.
  • Add in the vanilla extract and egg white, mixing until well combined.
  • In a separate bowl, whisk together the all-purpose flour and baking powder.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • In a microwave-safe bowl, combine the unwrapped caramels and milk. Microwave in 30-second intervals, stirring in between, until smooth.
  • Fold the milk chocolate chips into the cookie dough, followed by the caramel mixture.
  • Scoop tablespoons of dough onto the prepared baking sheet, leaving space in between.
  • Bake for 12-15 minutes or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For an extra chocolatey flavor, add more chocolate chips on top before baking, or drizzle melted chocolate over the cooled cookies.
