Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing well to combine.
  • In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, salt, and optional espresso powder.
  • Gradually add the dry ingredient mixture to the creamed butter mixture until fully incorporated.
  • In a separate bowl, repeat the creaming process with the pink dough ingredients, adding raspberry powder or pink food coloring until desired color is achieved.
  • Scoop tablespoons of each dough, flatten them slightly, and sandwich some ganache filling between them.
  • Place on the prepared baking sheet and bake for about 10 to 12 minutes.
  • Once cooled, drizzle with melted white chocolate and add toppings as desired.

Notes

For an extra flavor boost, consider using espresso powder in the chocolate dough. Adjust the amount of raspberry powder to suit your taste preference.
