Description

1 ½ cups graham cracker crumbs

6 tbsp unsalted butter

¼ cup brown sugar

3 tbsp unsalted butter

4 (8 oz) packages cream cheese

softened

1 ¼ cups granulated sugar

1 tbsp vanilla bean paste or seeds from 1 vanilla bean

4 large eggs

1 cup sour cream


Instructions

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a bowl, combine graham cracker crumbs, melted butter, and brown sugar until well mixed.
  • Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  • In a skillet, melt 3 tablespoons of unsalted butter over medium heat until it turns golden brown and smells nutty; let it cool slightly.
  • In a large mixing bowl, beat the cream cheese until smooth and creamy.
  • Add the granulated sugar and vanilla bean paste to the cream cheese, mixing until combined.
  • Add the eggs one at a time, mixing well after each addition.
  • Pour in the sour cream and the cooled brown butter, mixing until fully incorporated.
  • Pour the cheesecake filling over the crust in the springform pan.
  • Bake in the preheated oven for 30 minutes or until the edges are set but the center still has a slight jiggle.
  • Turn off the oven and let the cheesecake sit inside for 1 hour with the door slightly open.
  • Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
