This Vanilla Bean Brown Butter Cheesecake combines the rich, nutty flavor of brown butter with the classic sweetness of vanilla bean in a creamy, decadent dessert.

1 ½ cups graham cracker crumbs
6 tbsp unsalted butter
melted
¼ cup brown sugar
3 tbsp unsalted butter
4 (8 oz) packages cream cheese
softened
1 ¼ cups granulated sugar
1 tbsp vanilla bean paste or seeds from 1 vanilla bean
4 large eggs
1 cup sour cream
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and brown sugar until well mixed.
- Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a skillet, melt 3 tablespoons of unsalted butter over medium heat until it turns golden brown and smells nutty; let it cool slightly.
- In a large mixing bowl, beat the cream cheese until smooth and creamy.
- Add the granulated sugar and vanilla bean paste to the cream cheese, mixing until combined.
- Add the eggs one at a time, mixing well after each addition.
- Pour in the sour cream and the cooled brown butter, mixing until fully incorporated.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven for 30 minutes or until the edges are set but the center still has a slight jiggle.
- Turn off the oven and let the cheesecake sit inside for 1 hour with the door slightly open.
- Remove from the oven and refrigerate for at least 4 hours or overnight before serving.

Make sure to use room temperature ingredients for a smoother filling. For best results, refrigerate overnight.
