1 can of black beans
drained and rinsed
½ cup almond meal
½ cup cooked quinoa
½ small brown onion
finely chopped
¼ cup carrot
grated
2 cloves garlic
crushed
1 tablespoon tamari
salt reduced
1 tablespoons olive oil
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper
to taste
1 egg
4 cups mixed salad leaves
2 medium tomatoes
sliced
1 avocado
mashed

Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the almond meal, cooked quinoa, chopped onion, grated carrot, crushed garlic, tamari, olive oil, cumin, smoked paprika, salt, and pepper. Mix until well combined.
- Stir in the egg until the mixture holds together.
- Form the mixture into patties and place them on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until golden brown and firm.
- Assemble the wraps by placing a veggie burger patty on each wrap, top with salad leaves, sliced tomatoes, and mashed avocado.
- Wrap tightly and serve immediately.
