This Vibrant Carrot-Cucumber Spiral Salad is a refreshing blend of spring flavors, perfect for a light lunch or as a colorful side dish.
Ingredients

2 large carrots washed and peeled
2 large cucumbers washed and peeled if desired
2 tablespoons lemon juice freshly squeezed
1 tablespoon olive oil extra virgin preferred
1 tablespoon fresh dill chopped finely
to taste salt preferably sea salt
to taste black pepper freshly ground
Instructions
- Using a spiralizer, create spirals from the carrots and cucumbers. If you don’t have a spiralizer, you can use a vegetable peeler to make long ribbons.
- In a large mixing bowl, combine the spiraled vegetables.
- In a small bowl, whisk together the lemon juice, olive oil, dill, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for 15 minutes to chill before serving.
Notes
For added crunch, consider mixing in nuts or seeds. You can also substitute parsley for dill if preferred.
