  • Author: Eleanor
  • Total Time: 20 minutes

Description

The Viral Bell Pepper Sandwich is a colorful, crunchy, and flavor-packed delight. Sweet bell peppers sautéed with onions, layered with melted cheese, and dressed with a tangy mayo-mustard spread make this sandwich irresistible. Perfect for quick lunches, picnics, or Instagram-worthy meals.

Ingredients

Scale

4 slices of bread (white, whole wheat, or multigrain)

1 large red bell pepper

1 large yellow bell pepper

1 large green bell pepper

1 medium onion, thinly sliced

2 tablespoons olive oil

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

4 slices cheddar cheese

½ teaspoon salt

¼ teaspoon black pepper

1 teaspoon lemon juice

Fresh herbs (optional: parsley or cilantro for garnish)

Instructions

Step 1: Prepare the Bell Peppers

Wash all bell peppers thoroughly.

Remove stems and seeds.

Slice peppers into ¼-inch strips for even cooking and crisp texture.

Step 2: Sauté the Vegetables

Heat olive oil in a skillet over medium heat.

Add onions and cook 2–3 minutes until slightly softened.

Add bell pepper strips, salt, black pepper, and lemon juice.

Sauté 5–7 minutes, stirring occasionally, until tender-crisp.

Remove from heat and let cool slightly.

Step 3: Prepare the Bread

Mix mayonnaise and Dijon mustard.

Spread evenly on one side of each bread slice.

Step 4: Assemble the Sandwich

Place a slice of cheddar cheese on one bread slice.

Layer sautéed peppers and onions evenly.

Sprinkle fresh herbs if desired.

Top with second bread slice, mayo side down.

Step 5: Toast the Sandwich (Optional)

Grill on a skillet 2–3 minutes per side until golden brown and cheese melts.

Notes

  • Uniform Slicing: Ensures even cooking and crisp texture.
  • Avoid Overcooking: Bell peppers should remain slightly crisp.
  • Cheese Options: Cheddar, mozzarella, provolone, or gouda work well.
  • Bread Choice: Thick slices hold the filling better; lightly toasting prevents sogginess.
