Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes into even cubes and place them on a baking sheet.
- Drizzle the sweet potatoes with extra virgin olive oil, and sprinkle with ground cinnamon, salt, and black pepper. Toss to coat.
- Roast in the oven for 25-30 minutes, or until tender and slightly caramelized.
- In the last 5 minutes of roasting, sprinkle walnuts over the sweet potatoes and return to the oven.
- Once done, drizzle with pure maple syrup and toss to coat.
- Top with crumbled goat cheese and garnish with fresh parsley before serving.
